Hello Debbie,

I need locations. You don't give a location for "Mandela's Cafe" and the only one in North America that I can find mention of is in Edmonton, Alberta, Canada. There is a "Mandela's Soul Food Cafe" in Berkeley Missouri, a suburb of St. Louis. There is a "Mandela's Cafe" in Sri Lanka, and one in Uganda.

I cannot find any mention of minestrone soup served by any of them. Sorry.

It appears that you might be in Austin, Texas. There is a "Mandala's Cafe" (with an "A" instead of an "e") in Austin, but they do not have "minestrone soup" on their menu. They are an Asian restaurant.

Sorry, the minestrone recipe from Mandola's Italian Kitchen does not appear in any of my resources.

Mandola's has a menu here, and on that menu, the Minestrone Soup is decribed like this:
"Minestrone:"
"Vegetarian soup with zucchini, kale, beans, cabbage, potatoes, tomatoes, green beans, carrots, celery and ditalini pasta."

I will post this. Perhaps someone can recommend a copycat or "tastes-like" recipe.
