I'm afraid that I must disappoint you.

The Tallahassee Brown Derby was a franchise of “Girves Brown Derby”, a chain that started in Akron, Ohio. It was a steakhouse chain that was not connected in any way to the Beverly Hills/Hollywood "Brown Derby" or to the "Hollywood Brown Derby" in Walt Disney World. “Girves Brown Derby” expanded beyond Ohio and had several franchises in Florida, including the one in Tallahassee. The chain was quite popular for a while, but today it has been reduced to four locations, all back in Ohio. The dishes you requested do not appear on their current menu online.

I could not find any mention of "teriyaki steak" or "beef tips" from “Girves Brown Derby”, much less a recipe from there.

There are, of course, numerous recipes on the web for those two dishes, but I could not recommend any as being similar to the Derby's, since I never had them.

I'll post this for reader input.
