I cannot find any mention at all of an "Elias Restaurant" in Glendale, CA. I also checked Burbank and Los Angeles - nothing called just "Elias' Restaurant" and nothing on San Fernando Road or Columbus Avenue with a similar name.
I will post this. Maybe one of my readers can help.

I decided to dig a little deeper regarding Elias Restaurant. I found some city directories for Glendale on-line, and in the 1958 directory, I found this entry:
LaCita Cafe (Elias F. Gomez)
4608 San Fernando Road
Glendale, CA
In the 1971 directory, I found this entry:
Elias Restaurant (Elias Gomez)
235 S. Columbus Ave.
Glendale, Ca
I think that these are the two restaurants that you remember. Both were owned by Elias F. Gomez, who passed away on 31 May 1996 at age 74 according to the Social Security Death Registry.
I'm thinking that only Elias and his family would have known his recipe for enchiladas rancheras, so I see little hope of finding his recipe. I will post this. Perhaps one of my readers will respond with some info.
There are other recipes on the Internet for enchiladas rancheras - cheese, beef, and chicken, but none that mention either of Elias' Restaurants.
