Once before I wrote to you about "Stand Up Cookies" which are like a 
biscotti.
You were not able to find anything.  We have decided it is a family
recipe someone along the way made up and it lives on with each
generation 🙂.  Still the family favorite.

Hi Linda,

There are several apple pie recipes associated with Joan Nathan on the web, and there are several apple pie recipes that are called "bottomless" or "crustless" and that are baked in a square or rectangular pan.

However, I had no success locating one in which the twain meet. Sorry.

Joan Nathan published a number of cookbooks. Perhaps it's in one of them.

I will post this for reader input.
