Hi Pamela,

Well, I searched thoroughly, but I could not find any actual recipes from The Good Earth. The chef from The Good Earth published a cookbook: "Good Food" by Tony S. Elena. I read comments that said many of the restaurant's recipes are in that book. However, I did not find a black bean dish mentioned specifically. The biggest problem with that cookbook is that it has been out of print for several years, the two copies that I could find for sale .- one on Amazon and one on Ebay - are very expensive. Over $300.00. I could not finda copycat or "tastes-like" recipe for any black bean dish from The Good Earth.

There are graphics of The Good Earth's menu here with a list of the menu items on the right side of the page. I scanned that list, but I did not see any menu item that was "black beans and rice" or "black beans and (any grain)": New York Public Library

There is a Facebook Page for "The Good Earth" memories on which some former employees of the restaurant have posted. See:

That's probably your best chance to get information about the dish and possibly the recipe - post a request on that page.

I did find a couple of recipes for "Guatemalan Black Beans." Make these recipes and see if they taste like The Good Earth's:
