Good evening,

I was recently reminiscing about our old school family lunches
at Morrison's Cafe and wanted to see if you had their mashed
potato recipe. I like the way I make mashed potatoes, but they
seemed to have a very distinct flavor/consistency that I would
love to have again, even if just for the memories. That, and their
chocolate cake.  Any help would be greatly appreciated.

Thank you,

Hello Sally,

I do have a mashed potatoes recipe from the Morrison's kitchen manual. I don't see anything special about it, but it is below. It is, of course, a cafeteria recipe that makes a large quantity.

Keep in mind the fact that Morrison's managers would sometimes make small modifications in the manual's recipes at their own particular cafeteria. No one would know what those were except the former employees of that particular Morrison's.

My copy of the manual has only the German Chocolate Cake and the Devil's Food Layer Cake recipes. Is one of those what you want?

Morrison's Mashed Potatoes

Ingredients            Amount       Method

Potatoes(peeled)  10 lbs          Boil and drain well

Milk                       1 Qt.
Oleo                      1/2 lb.        (margarine or butter)
Melt the fat in the milk.

Place potatoes in mixing bowl and use heavy paddle
at low speed to break up.

Change to wire whip and with machine on low speed,
add the milk and oleo slowly.

Salt                       to taste       Salt to taste

Change to high speed and whip for five minutes. Potatoes
that are stored in the kitchen should be covered with wax paper.

Potatoes should be whipped while they are hot. If potatoes
or milk are cold, the potatoes will be gummy.
