Hello Rosie,

Well, I don't have any recipes for canning meats. When I began doing this site, I got several requests about canning meats, but I decided not to deal with them.

Canning meats can be very dangerous. To *safely* can meats or fish or poultry requires a special canner that cans at temperatures of 240° or more. The reason is because home canned meats are prime candidates for a fatal form of food poisoning known as botulism. Don't take any chances, but if you must do it anyhow, I suggest you get information from the USDA website at: National Center for Home Food Preservation,
or buy a book like this one: "A Guide to Canning, Freezing, Curing & Smoking Meat, Fish & Game" by Wilbur F. Eastman

I do have a few recipes for pickling meat products, but they are all refrigerator pickles, not canned. See: Pickling Meat
