I have the recipe for Morrison's "M-1" sauce as part of the Macaroni & Cheese recipe here:
However, I cannot find any mention of, and have never heard of, an "M-2" sauce in any of their recipes.
Where did you hear of it?

I have a partial copy of an older Morrison's Kitchen Manual (probably pre-170). It does not have a recipe for "M-2" or for "Brown Gravy" or for "Onion Gravy" and no "Chuck-Wagon Steak" recipe at all.
My "go-to" for Morrison's recipes is an online acquaintance who was a former Morrison's Cafeteria manager and who has his copy of the Kitchen Manual from before Morrison's was sold. In a previous response, he said that the gravy that was served with the "Chuck-Wagon Steak" was the "mushroom gravy" with the mushrooms replaced by onions.
I do have the Morrison's mushroom gravy/sauce recipe in my files. So according to the information that I have, if you follow the below recipe from my manual and substitute onions for the mushrooms, you should have the "M-2" onion sauce.

Morrison's Mushroom Sauce Butter or Margarine 1 lb. Mushrooms 4 lbs. Flour 8 ozs. Beef Stock(Hot) 8 lbs. Salt 1 oz. Melt margarine in sauce pan. Add sliced mushrooms. Saute in butter until brown. Add flour; blend well. Brown slightly. Add hot beef stock and salt. Cook until smooth and thickened, stirring constantly. Use for baked Swiss steaks, meatloaf, etc.
