I have the Morrison's Meatloaf recipe from the Morrison's Kitchen Manual. It was copied from the actual Manual and sent to me by an ex-employee of Morrison's in a rather jumbled up state. I have tried to rearrange it sensibly. See below.

Note that this is a food service recipe that makes 80 four ounce portions. You will have to cut it down to size for however many servings you want to make.

Savory Meatloaf

Ingredients

ground  beef            9 lbs
ground  pork            4 1/2 lbs
ground  veal            4 1/2 lbs

mix meats together

powdered  milk          5 oz
eggs,  whole           18 ea
water                   2 1/2 lbs

reconstitute milk with water and beat in eggs

bread  crumbs           2 lbs 4 oz
onion,  minced          1 ea
parsley,  minced        1 Tbl
L&P worcestershire sauce 1/2 oz
pepper                  2 tsp
salt                    1.5 oz
poultry  seasoning     1 tsp

add  bread crumbs,chopped onions and parsley,
L & P, salt and pepper,poultry seasoning

butter                  6 oz
paprika                 1/2 oz

grease 8 loaf pans(9x4).  pack 3 pounds into each

dot with butter and sprinkle with paprika

bake 400F 1hr 10 min

yield: 80 4 oz portions

Hello James,

My online acquaintance, who is a former Morrison's manager, just sent me the below recipe from his copy of the Kitchen Manual. It's much simpler than the other one. He said the first recipe is not typical of a Morrison's recipe, so this one is probably more accurate for the cafeteria chain.

 Yield: 100 3 oz. servings

 Temp: 350 conventional oven or 300 convection

 1 lb. bread crumbs
 2 lbs. onions

  Place onions and bread crumbs in food chopper and chop fine.

20 lbs ground beef
1 lb. chili sauce
1/2 lb sweet relish
10 eggs
5 cloves crushed garlic

 Place ingredients, meat first, in a large mixing bowl. add the above mixture and bread 
 crumbs and onions. Mix by hand until mixed thoroughly.
 Divide mixture into five balls. Should weigh about five pounds each. Place in oiled loaf 
 pans to shape. Place in oven and cook for one hour or until center temp is 140 degrees.

 Remove from oven and discard fat. Cool meatloaf and slice, place in clean pan. 
 Pour hot gravy over and cover and return to oven until center temp is 160.

Gravy

1 lb. oleo and 1 lb. flour.. Melt oleo in sauce pot. Add flour and cook on medium heat 
for 10 minutes. Stir constantly and do not burn. If burned, discard and start over.

2 gallons boiling water, 7 oz. beef base. Mix and add to roux.

5 oz. tomato paste and 1/2 tsp. black pepper. Add to gravy mixture and stir. simmer 
for 30 minutes.

Melt 1/4 lb. oleo (one stick) and 1/2 lb. diced onions in skillet. and saute until tender. 
add to gravy and stir.

NOTES:

(1) Can mix meatloaf night before.
(2) After cooking meatloaf for one hour, spoon off excess grease
(3) After cooking let meatloaf sit about one hour before slicing.
(4) To ensure meat does not fall apart, make sure there are no cracks after forming.
(5) Must be cooked at 350 or 300 convection.
