It’s the sauce they put on the Patty Melt. I know a few are on the web but not sure they’re legit. Appreciate any help! Jim
Hi Jim,
Well, how does one determine for sure whether a recipe that they find on a website is authentic? Sometimes, if a site has a comments section, you can read the comments about the recipe and see what others who've tried it say. Not all sites have a comment section, though, and if there isn't one, I'm afraid that you have to take the word of the person who posts the recipe until you actually make the recipe and can verify for yourself whether it tastes like the product you get at the restaurant.
Whataburger sells the sauce. You can buy it at several retailers, including: HEB, Amazon, and Wal-Mart:
If you want to make it yourself, this recipe appears to be respectable: HellthyJunkFood See also below for that recipe. You'll have to make it and decide for yourself whether it is accurate.

Whataburger Patty Melt
HellthyJunkFood Ingredients: 2 - 4 oz Burger Patties (80/20) Monterey Jack Cheese Slices Texas Toast Grilled Onions 1 Tbsp Creamy Pepper Sauce 1 Tbsp Mayonnaise Creamy Pepper Sauce: 1 Tbsp Olive Oil 1/2 Sweet Onion 1 Clove Garlic 1 tsp Black Pepper 1 tsp Mustard 2 tsp Chipotle Peppers (canned) 1 Tbsp Parsley 2 Tbsp Brown Gravy Powder 3/4 Cup Water 1 Cup Buttermilk Instructions: For the sauce, dice up Onion, Garlic & Parsley. Add oil to a sauce pan and add in your onion until translucent and your garlic. Combine all the dry ingredients add the water, bring to a boil and let simmer. Finally add in your buttermilk. As a spread on your burger, combine 1 part Mayonnaise and 1 part creamy pepper sauce. With the other half of your onion, saute in a separate pan with oil until you reach carmelization. Weigh out your burgers to approximately 4 oz each and season them with Julia's secret seasoning blend*. While on the grill, make 3 perforations into the meat in one direction and 3 perforations into the meat 45 degrees. This will prevent the burger from shrinking too much and give it an interesting texture. Butter up some Texas Toast and grill for 2-3 minutes on medium heat The build order is: Texas Toast, cheese, burger patty, cheese, burger patty, creamy pepper spread, grilled onions and Texas Toast.
*Wait... What??? "Julia's secret seasoning blend"??? Try just salt & pepper
