Hello, I am looking for the recipe for the egg sauce from Ron of Japan.
Please let me know if you are able to locate it. Thank you in advance!

Hello Kate,

I searched for a recipe with enough provenance to indicate that it was actually from Ron's of Japan or someone connected with the restaurant, but I had no success. It's a very popular sauce and as a result,  a lot of people have tried to duplicate it, so there are a lot of "copycat recipes" for it on the web.

The problem is that each of these copycats is slightly different and there is no way to determine which, if any of them, tastes the most like Ron's, except to make the recipes and decide for yourself. These two sites have recipes that seem to be well thought out:

Kogani-Yaki

Japanese Egg Yolk Sauce

If the results are not yellow enough, try adding annotto, which is a deep yellow food coloring. From the photos of Ron's sauce that I saw, I think the actual recipe must call for it. From online discussions of the sauce, it likely contains some miso, I think.

Also, see: Japanese Egg Yolk Sauce

I will post this for reader input.
