Hi Christine,

I'd send it to him if I could, but that request is from 20 years ago. I no longer have Richard's email address.

Club Sauce

36 large ripe tomato
6 large Onions,  grind fine
6 C Sugar
6 C Brown Vinegar
6 T Pickling Salt
18 Sweet Red Peppers, grind fine

Scald & peel  tomato. Put into large preserving  kettle.  Squeeze  tomato  
in your hand to break into small pieces. Add ground Onions,  Vinegar,  
sugar & salt.
Cook 2 hours stirring often.
Make a spice bag:
1 t celery seed
1 t ground ginger
1 t ground cinnamon
1 t  ground all spice
1 t ground cloves
1 t mustard seed
Add spice bag to the sauce
Drain juice from ground red peppers.  Add to 1st mixture. 
Cook 30 minutes more.

Pour into jars & seal.  Pint jars  are best.  

Place sterilized jars in boiling water.  Dip lid  in hot water & place on jar & 
tighten the ring to seal.  Cover until tops pop.
