My mother made this when I was growing up.  It’s called “Fritos Sunday Chicken”
and I think she may have gotten the recipe off the Fritos bag.  The ingredients
that I remember are:  Fritos, a can of cream of chicken soup, a can of deboned
chicken (in a can the size of a large can of tuna), diced onion and grated cheese.
There may have been more ingredients it was cheesy and the fritoes made the
crunchy crust.  My brother and I loved it when she made dishes like this it was
such a treat.

My mother had Polio in the early 50s epidemic before vaccine was available. It
left her permanently in a wheel chair and she looked for recipes that could be
prepared and baked or were easy to make.  That was before handicapped
adjustments were made and she raised 2 children and helped my dad with his
radio and T.V. repair business about 20 years.

Any help you can give me would be greatly appreciated.

Hi Jan,

I had no success finding anything called "Fritos Sunday Chicken".

However, there are a lot of "Fritos Chicken Casserole" recipes out there, and the ingredients that you list usually form the basic recipe for that. Most of the recipes that I see call for pre-cooked chicken breast meat, fresh or from a rotisserie chicken, but canned white chicken meat would be an adequate substitute and some recipes might have called for that.  There is a lot of variety in the non-basic ingredients, and without knowing what those other ingredients were in the recipe that your mother used, I cannot pinpoint an exact recipe. Sour cream is a common ingredient in many such recipes,  some call for tomatoes or tomato sauce, some have rice, and some have taco seasoning or other Mexican ingredients. A large proportion have chicken breast meat, cream of chicken soup, diced onion, and cheese, but with additional ingredients.  There are also recipes that call for cream of mushroom or cream of celery soup, etc., and some that call for Doritos instead of Fritos.

There are some examples on these sites:

I'll post this for reader input.
