Hello Brad,

Morrison's probably used ordinary food service canned green beans, but my old copy of their kitchen manual mentions a variety of green beans called "Blue Lake".

James, a former Morrison's manager, says this:

Three cans of beans.
"The beans were drained (first time) and the liquid was replaced with water, and drained a second time and then the water replaced. Then 2 oz. of bacon base was added along with a whole onion, peeled and quartered, and a teaspoon of black pepper.  The beans were then brought to a boil, the heat lowered and simmered for about an hour. Some managers actually put a couple of slices of bacon in the pot."

If you can't find "bacon base," Amazon has it in larger quantities and a bit on the expensive side.
