Subject: Bill Knapp’s recipes From: Katherine Date: 8/14/2020, 8:22 PM To: phaedrus@hungrybrowser.com Hello. I worked at various Bill Knapp’s from age 16, through college, and on and off until I was in my early 30s. I managed several when I was in my 20s. I miss the food so much. A couple of things: the mushroom and tomato soups were indeed “Heinz”. I seem to recollect that the clam chowder also was not homemade, but unfortunately, I cannot remember the brand. The broiled scrod just had a mixture of Lawry seasoned salt mixed with mayo and brushed on. I still make it that way sometimes. I have seen Bill Knapp’s cakes and other baked goods sold commercially so someone must still be making them. Last time seen was at an Andersons General store (which has since closed. My brain keeps trying to convince me that I once saw th in a Kroger bakery freezer, but I might be wrong! Thanks for your recipes. Bill Knapp’s has some of the best food out there in the 70s and early 80s. Too bad they deviated from their success with the “new concept” dining. Some of those new dishes weren’t bad, but I think they declined a lot after that. Kate
Thanks for the info, Kate!
At the bottom of this page, I have a list of Bill Knapp's recipes that I have had requests for, but that I have been unable to find. Can you shed any light on any of those? - Bill Knapp's
