I work in a hospital where the cafeteria is owned by Morrison's. I love their chili

they aren't allowed to give me the recipe. The hospital is in Louisville, KY.
Can you help me find the recipe please?

Hi Pat,

I have a friend, James, who has copies of the Morrison's Cafeteria Kitchen Manual and also of the 1/91 Morrison's Hospital Food Service Manual. He sent the below recipe from the Hospital Food Service Manual. This is a Food Service recipe and therefore it makes a lot of chili. You'll have to figure out how to cut it down to home recipe size.
