Hi Wendy,
Sorry, I was unable to find anything on the web or in our cookbook library about this place or the rolls. There is a beach named "Pineapple Beach", but I was unable to find any mention of a restaurant/resort with that name in San Juan, then or now.
There is currently a resort named "Pineapple Beach Club", but it appears to be on Antigua and I could not find anything about its restaurant.
