Hey Phaed:
Finer restaurants often use a Brie Butter or Spread along with their speciality bread.
Here are a couple of basic recipes with ingredient amounts reduced for home use.
The restaurants will often add another special ingredient or two so they can be different.
Brie Butter
Ingredients:
8 ounces Brie cheese, rind removed
4 ounces butter
1/4 cup white wine
Instructions:Thoroughly combine all of the ingredients together in a blender or food
processor on slow speed until well blended. Serve immediately or store tightly covered
in the refrigerator until ready to serve.
Champagne Brie Spread
Ingredients:
8 ounces brie, rind removed
6 ounces cream cheese
3 tablespoons Parmesan cheese freshly grated
3 ounces Brut champagne
1 teaspoon white pepper, freshly ground
1 to 2 teaspoons butter, cut in pieces
Instructions:In the bowl of an electric mixer with the paddle attachment, combine
the brie and the cream cheese and mix on low speed for 3 to 4 minutes, until smooth.
Add the Parmesan cheese, champagne, white pepper and butter; continue to blend for
about 5 minutes. Scrape down the sides of the bowl and mix for another 3 minutes.
Divide the spread into 5 ounce ramekins. Chill in the refrigerator for 1 hour or
until just set. Remove from the refrigerator just before serving, and let the
spread warm up slightly. Yield: 1-1/2 cups spread.
