We always started our meal with the Cheese Nachos. Ever since the day Chi-chis closed, I have tried to find similar quality nachos at other Mexican restaurants, as well as searched the internet for this recipe, to no avail. Can you please help me find the recipe for Chi-chi's Cheese Nachos so that I can finally satisfy my craving? Thank you.
Hi Tammy,
Is that the "chili cheese nachos"?

No, they were just plain cheese nachos. They seemed to be made on what started out as an 8-inch, round tortilla that had been crisped somehow and cut into 4 equal chips, with a shredded cheese blend melted on top, and one jalapeno slice baked on top of each chip's cheese.
Hi Tammy,
I did a search, but I cannot find any mention of Chi-Chi's plain cheese nachos. There are recipes online for their "Nachos Grande", seafood nachos, and "Texas Nachos", but I cannot find even a mention of the cheese nachos. Sorry. I'll post this for reader input.
This sounds similar to what I make when I have a craving for nachos:
Take good, flat tortilla chips and spread them on a microwave-safe plate. Cover them with shredded Mexican cheese blend. Microwave until the cheese is melted. Place Jalapeno rings on top. That's it!
I have no idea what Chi-chi's might have added to this simple recipe to make theirs different, other than the one large crisped taco instead of taco chips.
