I'm not clear about what you mean by "southwestern chicken." There is no dish by that name in my copy of the Morrison's Kitchen Manual. The only Morrison's chicken recipe that I already have that has a Southwestern flair is "Tampico Chicken" . There is a rough recipe for that here: Morrison's Tampico Chicken
I contacted a former Morrison's manager that I know, and he also did not know of a Morrison's dish named "southwestern chicken." He said this:
"This is a tricky one. There is a Santa Fe Chicken, but the Southwest version of the Beef Taco Meat (there was also another version of beef taco meat) had an easy sauce that was often used to cover chicken, which was then baked. It was not in the book, except for the beef taco meat version. My guess is that this is it: 1 lb. diced onions 8 oz. diced green bell peppers 4 oz. minced garlic in water Cook mixture until onions are transparent. Add 1 # 10 can tomato sauce, 1 cup chili powder, 1 T salt, 1/3 cup ground cumin, 1/4 cup black pepper. Blend well and simmer for 20 minutes stirring frequently."
If it's not either of these, perhaps you can describe it in more detail?
