Sorry, I have no idea whether they made their own "salad dressing" of if they used a commercial "salad dressing" such as "Miracle Whip". There is no "salad dressing" recipe in the partial collection of Woolworth's recipes that I have. The recipes that call for "salad dressing" just say "salad dressing" and the ones that call for "mayonnaise" just say "mayonnaise."
As the note that I posted with the tuna salad recipe suggested, try making it both ways, with salad dressing and with mayonnaise, and see which tastes right to you. I just said "Miracle Whip" because it's the best-known commercial "salad dressing" product these days. If it had been about "mayonnaise," I would have said "Hellman's" for the same reason.
I had an aunt who took me to the Woolworth's Lunch Counter for lunch often in the 1950s. I always got either the tuna salad sandwich or the chicken salad sandwich.
