I used to go to Morrison’s every Thursday for their glazed corned beef.
Is there anywhere I can get the recipe?

Hi Louise,

See below. Thanks to James for this recipe from the Morrison's Kitchen Manual.

Phaed

Morrison’s Corned Beef – Inside Round

Yield: 4 portions to raw one pound – 3 ounce portions

Corned Beef Inside round – Thaw under refrigeration

1 tbsp black pepper
1 tbsp chopped garlic

Soak at least 12 hours prior to cooking. Discard water Place round fat up in greased roasting pan.
Rub well with pepper and garlic. Place in 300 degree oven and roast approximately 12 – 16 minutes
per pound or until 150 degrees internally.

Glaze

4 oz catsup
2 oz light brown sugar
2 oz mustard
2 oz pineapple juice

Remove from oven. Discard drippings. Dissolve catsup, sugar, mustard and pineapple juice.
Spread over cooked round. Return to oven until glazed – about 10 minutes.

Place on line, fat side up. Carve end to end at slight angle. Garnish carving block with
parsley and tomato roses.

Do not baste round with drippings. They are too salty. Do not use drippings to cook cabbage.
