I'm sorry, but I cannot find any mention at all of the pineapple delight cake from Mckenzie's Bakery in New Orleans except in an old newspaper ad from the bakery. No recipe at all that I can find. I'll post this for reader input. Perhaps someone knows of a "tastes-like". If you are in the New Orleans area, have you tried "Tastee McKenzie's?" They have all of the bakery's recipes. They might make and sell the Pineapple Delight Cake as they do other McKenzie's products. Phaed
