Sorry, I can't find even a mention of blue cheese fries from Dave & Buster's.

I'll post this for reader input.

They seemed pretty simple.. waffle fries with a really thick blue cheese sauce 
on them, blue cheese crumbles, green onions and bacon crumbles.
I cannot duplicate that sauce though.
Blue cheese by itself doesn't melt well, I can't tell what it's mixed with, nor 
have any idea which of the 50 kinds of blue cheese it even was.

Maybe we'll be lucky and a current or former Dave & Buster's employee will see this post and respond with a recipe or at least a clue about the sauce. I'll post this next week, and I'll let you know if I get any response.

I saw the post about the D&B bleu cheese fries. I don't have the recipe, but was told the 
base was their signature bleu cheese salad dressing. They still serve it on the side with 
chicken strips and fries. a group of us often went to the Dallas location in the 1990s and 
one member of our group had to have those fries...which were messy. A waiter said it was 
their blue cheese salad dressing "with some other stuff." They made their dressings from 
scratch.
