Re: Honey Raisin Bran Muffin recipe From: Michelle To: PhaedrusDate: 3/26/2024, 3:54 PM On 3/25/2024 11:06 AM, Michelle wrote: Dear Uncle Phaedrus, I buy these delicious honey raisin bran muffins from Ralph's grocery store, which is part of the Kroger chain. Here is a link to them: https://www.ralphs.com/p/bakery-fresh-honey-raisin-bran-muffins/0001111007296 The ingredients are listed in the link. I am looking for a copycat recipe for these. I emailed the store but they would not share any information. These muffins are soft and cake-like in texture, not dense or heavy. That's what makes them different. I've searched for similar recipes and have tried a few, but they don't have the right texture. I'd really appreciate your help, thank you very much! Michelle
Hello Michelle,
Not unexpectedly, I had no success finding a recipe or a copycat for Ralph's muffins. I did find several recipes for raisin bran muffins or honey raisin bran muffins that you might be able to adapt into a copycat. However, you'll have to try them to see. I did not find any claiming to be "taste-likes" for Ralphs, and I cannot search by texture.
The one below is from the Post Raisin Bran Box.
Phaed
Honey Raisin Bran Muffins 1 3/4 cups all-purpose flour 2 Tbsp sugar 1/4 tsp salt 1 Tbsp baking powder 2 1/2 cups Kellogg's Raisin Bran Cereal 1 1/4 cups milk 1/3 cup honey 2 egg whites 1/4 cup vegetable oil In mixing bowl, stir together flour, sugar, salt and baking powder. Set aside. In another bowl, combine Raisin Bran with milk and honey. Let soak for a couple of minutes. Add egg whites and oil. Beat well. Add flour mixture to Raisin Bran mixture. Mix until just combined. Spoon into lightly greased muffin tins. Bake in 400 degrees F oven for 20 minutes or until lightly browned. Makes 12 muffins.
