I exhausted my resources today without any success finding a recipe for Longchamp's Delmonico Potatoes. I know of no way for you to get it except for getting your hands on a copy of one of the two cookbooks of Longchamp's recipes. You can purchase used copies online. Amazon and E-Bay and other used booksellers have them:

Peel and cool; cut in dice form. Put cream in pan and bring to a boil. Add potatoes, butter, pimentos, and cook for 10 minutes or until thick. Season with salt and pepper.
