Well, there is no recipe for zucchini and tomatoes in my circa 1960s copy of the Morrison's Kitchen Manual, so I contacted a reader who was a Morrison's Cafeteria Manager in the 1990s and who has a later edition of the Morrison's Kitchen Manual (circa 1990s). He said there is no zucchini and tomatoes recipe in his copy of the manual. It must have been an in-house recipe. Sorry.
