Hi Mary,

I am familiar with LeFleur's. I lived in Jackson in the 1970s. For the life of me, I can't recall what I ate at LeFleur's, but I doubt that it was the trout almondine - I wasn't into fish much in the 70s.

I have some recipes from LeFleur's: Crabmeat West Indies Cocktail, Crabmeat En Skillet, Pompano En Papillote, Oysters Bienville, Grasshopper Pie, and Stuffed Eggplant. However, I do not have and could not find that trout recipe. I believe it was Lefleur's version of "Trout Meunière Almondine," which means "trout in brown butter sauce with almonds." There are several raves about it on message boards, and a couple of pleas for the recipe, but no one seems to have had any success.

That said, "Trout Meunière Almondine" or "Amandine" is not an uncommon dish. If I may make a suggestion, why not try another recipe? This recipe for "Trout Meunière Amandine" is from "Saveur Magazine," so it should be quite a good one:

I'll post this for reader input. Perhaps a member of George Wilkinson's family will see it and respond with the recipe.
