Fried Salt Pork & Cream Gravy

Makes 3 servings

Ingredients:

8 oz. salt pork
2 tbs all-purpose flour
1-1/2 cups whole milk
black pepper to taste

Directions:

Rinse and dice the salt pork. In a skillet,
over low heat, add the salt pork. Cook 
for 10 minutes or until the salt pork is 
crisp. remove from the skillet and place 
in a serving dish Drain all the fat from 
the skillet except 2 tablespoons.

Add the all-purpose flour to the skillet. 
Stir constantly and cook for 1 minute. 
While constantly stirring, slowly add 
the milk. Continue stirring and cook 
until the gravy thickens. Remove 
from the heat and season with black 
pepper to taste. Pour over the salt 
pork and serve.
