Below are what I have for those dishes. I wondered if they served "tomato aspic and stewed okra"
as a single, combined dish, but I could not find any evidence of this. I never noticed - aspic
and okra are not my cup of tea.
There are two okra recipes - one for fresh okra and one for frozen. However, they are quite different,
the fresh one using bacon grease and the frozen one using stock.
These are food service recipes, and therefore they make large quantities. Perhaps you can figure out
how to cut them down for home use.
* I was not able to find out how many ounces are specifically in a #10 tomato juice can. However the
average amount of any product in a #10 can is given as 109 ounces.
** #200 or "full-size" steam table pan's capacity is 346 ounces.
*** No details given on stock. Probably leftover stock from roasting beef. They saved and froze stock
from roasting beef for use in other dishes.

Tomato Aspic
Tomato Juice 1 #10 can*
Parsley 1 oz
Celery 4 ozs
Bell Peppers 4 ozs
Onions 8 ozs
Salt 1/4 oz
Sugar 1/4 oz
Tabasco 3 drops
Lea & Perrins 1 1/2 ozs
Bouillon cubes 2
Bring to a boil. Reduce heat. Let simmer 5 minutes.
Remove the above from heat. Strain.
Gelatin 2 1/2 ozs
Enough Water to dissolve
Add dissolved gelatin to mixture.
Pour into molds and congeal (let set)

Okra
Bacon ends 1/2 lb
Fry bacon to get meat grease.
Fresh okra 15 lbs
Water 1 qt.
Salt 1 1/2 Tbsp
Pepper 1 Tbsp
Put grease and okra in roasting pan.
Cook in oven until done. (450 degrees F.)

Frozen Okra 8 lbs for #200 steamtable pan**
4 lbs for 1/2 #200 pan;
3 lbs for #160 pan
Arrange in steamtable pan while still frozen. This is done so
as not to handle but once. Fill pan with stock*** to one inch deep.
Cover and steam 35 minutes. Do not boil. Season with one ounce
of salt for each 3 pounds of okra; add 2 ounces margarine or butter.
Cover. Keep hot and let stand 5 minutes before serving.
*** No details given on stock. Probably leftover stock from roasting beef.

Morrison’s Okra (Frozen whole)
Yield: 50 servings/portion 6-7 pods
1/2 #200 steam pan
10 lbs frozen whole okra
2 oz. bacon base
1 1/2 quarts bacon stock
1 1/2 oz salt
4 oz. oleo, melted
Arrange okra in two steam pans. This is done so as not to handle twice. Add raw base to stock.
Use stock to cover pan one inch deep. Cover and steam for 12 minutes. Do not boil. Add salt,
one tbsp per pan. Add oleo and cover. Keep hot and let stand 5 minutes before serving.
