Any luck on those Edwin
Hello Edwin,
Below are what I have for those dishes. I wondered if they served "tomato aspic and stewed okra" as a single, combined dish, but I could not find any evidence of this. I never noticed - aspic and okra are not my cup of tea.
There are two okra recipes - one for fresh okra and one for frozen. However, they are quite different, the fresh one using bacon grease and the frozen one using stock.
These are food service recipes, and therefore they make large quantities. Perhaps you can figure out how to cut them down for home use.
* I was not able to find out how many ounces are specifically in a #10 tomato juice can. However the average amount of any product in a #10 can is given as 109 ounces.
** #200 or "full-size" steam table pan's capacity is 346 ounces.
*** No details given on stock. Probably leftover stock from roasting beef. They saved and froze stock from roasting beef for use in other dishes.
