I'm a little bit puzzled. As best I can tell, Gelson's is a somewhat large upscale grocery chain that is found only in California, and every Gelson's has a "Viktor Benes" European style bakery within it - 19 locations. They don't appear to be closed, so I guess you are saying that they stopped selling this particular cookie. I looked at several "Viktor Benes Bakery" menus, but none of them had a "chocolate chewy cookie" on them.
I could not find any mention at all of "Viktor Benes chocolate chewy cookies" except for a request on Reddit that was very similar to yours. Really, all you are giving me is your description of the cookie. I can't do much searching with so little. What was it called on the menu at "Viktor Benes Bakery?" Since they sell European pastries, then what is the European name for this cookie?

I guess you mean the "Viktor Benes Bakery Chocolate Chewy Cookies?"
I suppose she might mean the "Chocolate Meringue with Nuts" cookies that are listed on the menu. It's possible, but it's just speculation. She didn't respond to my email reply to her request and say that those are what she meant. Plus, I had no success finding any recipes at all from "Viktor Benes Bakery" - none with any name so it isn't any help in finding her requested recipe. If, when I was searching, I had found a recipe titled "Chocolate Meringue cookies with Nuts like those at Viktor Benes Bakery," then I would have sent it to her, even with the different name.I gave her a phone number and an email address for the person who runs that bakery. If she called them, they would likely tell her that the cookie she liked was called "Chocolate Meringue cookies with Nuts."I was hoping that she might find that those cookies had a European name. If so, I might be able find a recipe under that name. If someone requests a recipe from a specific restaurant or bakery, that's what I search for - I don't like to guess.

Someone suggested to me that your "chocolate chewy cookies" might be the "Chocolate Meringue Cookies with Nuts" that is on the Victor Benes Bakery's menu. I did find a recipe today called "Chocolate Meringue cookies with Nuts", but it doesn't mention "Viktor Benes Bakery." It's at:
