TY for posting the cheese enchilada recipe. I’m pretty sure that is the one that was used in Chula Vista City Schools (near LA) in the 50’s. I remember all those flavors and can’t wait to give it a try. My friend, Lynn, spoke about a favorite salad from her childhood that her mother made in the 50’s or 60’s. She has searched and nothing came up quite like what she described. Will you please put on your detective hat and give it a try? I’m sure the jello flavors are at the discretion of the chef. for the jello mold: orange jello, i think softened vanilla ice cream, maybe cottage cheese and maybe pineapple pieces. Maybe even cream cheese. my mom used a mixer. The consistency was kinda spongy thanks Thank you, Phaedrus!
Hi Mary,
The lack of certainty in the description you give of this Jello salad dish makes this a very difficult task. However, I did find a recipe with a photo that seems to fit.
