It had a rich tomato broth, but also some small beef chunks, which I think had been cooked to produce beef broth also. It also had the usual ingredients, cannelli beans, green beans, zucchini, onions, celery, garlic, and some type of small pasta. He served with warm garlic buttered breadsticks. Sorry, I can't find this. I only found a couple of brief mentions of Parelli's Restaurant in Jeffersonville and nothing about the minestrone soup.
