I can search for an enchiladas recipe from San Antonio schools, but I cannot search for one
from the early 80s and 90s. When people post school recipes, they just say “this recipe is
from McArthur High School in San Antonio, Texas.” They almost never put a date on it. I
occasionally find one with a date mentioned, but it’s pure luck.
Below is photo of a recipe for cheese enchiladas from the recipe manual of McArthur High School,
which is in the North East Independent School District in San Antonio Texas. This is from: Pinterest .
As you can see, no date is given. It could be from the 80s and 90s, or it could be the current
recipe. No way to tell. You did not specify any particular kind of enchiladas, and the cheese
enchiladas recipe is all that I could find. The penciled-in amounts appear to indicate that
someone cut (or tried to cut) the amounts down from cafeteria to home use. I have no idea of
the outcome of that attempt.

Does anyone have the recipe for the Enchilada's NEISD San Antonio TX used to serve in the 1980's?
remember Wednesday Enchilada Day and you hauled butt to be in the front of the hot lunch line because

Yes I m on the Roosevelt alumni on Facebook and someone put a copy of it on there. There was a cookbook
at one time I wish I could get a hold of. The enchilada are a big hit in my household but you may have to
some calculating because it makes 216 enchiladas. Send me an email and
I ll send you a copy.
It does mention a date, but does not give the recipe itself. You could try writing to the e-mail address
that’s given in that post. The post is from two years ago. I could not locate the recipe on Facebook that
is mentioned.

Subject: lost cake recipes
I have been searching for 2 cake recipes and am hoping you can help. The first was
called Economical Cake. It is a war time recipe my mama made as I was growing up.
It was made in small loaf pans. It was a spice type of cake with raisins in it.
It was a war recipe so am sure it used less of rationed items.
Thank you for any help I would surely love these recipes. She was from New York if
that helps at all.

There are dozens of cake recipes on the web with the name “economical cake.” The
only one that I could find with raisins and that mentioned wartime rationing is
this one: War Time Fruit Cake

Sorry, no success. I can't find any Christmas cookies recipe with any
mention of a connection to Rich's.
