Catfish

The next kind of fish that I ever caught was a catfish. It was too small to keep, and I don't know whether it was a channel catfish or a mudcat. Could have been either one. I've caught a lot of both of them over the years. A catfish "boom" hit Mississippi in the seventies. Catfish ponds that were regularly stocked and in which you could fish and pay a per-pound fee appeared from nowhere. Catfish, particularly channel catfish, are very good to eat. They're farmed in the South these days and filets are sold in supermarkets. There are catfish restaurants all over the South. Some are good;some are not so good. Not so easy to find fried catfish up here in the Northeast.

"Mudcats" (sometimes called "hornpouts" in the North) are considered "trash fish" by many, but some folks say they are delicious when coated in cornmeal and fried. Other "trash fish" include gaff-top catfish and hard-head catfish. These fish inhabit the rivers and bayous near where they flow to the ocean. They thrive in the brackish water there, and we used to troll for them in the river. Fun to catch, but we we always gave them away to anyone who wanted them. They too, are said to be quite tasty when deep fried with cornmeal batter.

Catfish from Southeast Asia are indeed "catfish", but they are not "channel catfish."
