Your description is quite thin. The only recipes for school cafeteria peanut butter bars with chocolate icing that I can locate are these, with a topping of melted chocolate chips:

I'm not sure if either topping would qualify as a "light chocolate ganache."
What was the name & location of the largest school at which you had these? That might help.
