Hello Phaedrus,
I am looking for a paella recipe that was in Cuisine Magazine in the early 1990’s .
It was a paella Valencia with chicken, Chorizo and lots of different seafood. Clams,
Mussels, Shrimp, and Calamari, I think. It was a favorite but I cannot find the
original recipe. I looked in the archives and the Bon Apatite is close but I would
really like the original. This article had several versions of other paellas and I
want to try some of the others as well.
Any help would really be appreciated, family is having a paella cook-off during Covid
and this one was my favorite. Now that it is just my husband and me, we don’t make
large recipes and I have lost my copy of the magazine.
Be Well,
Cindy
Hi Cindy,
Well, I have to admit that cooking magazines are something that I mostly avoid. I just don't have
time for them. We have a few cookbooks of magazine recipes: BHG, Bon Appetit, Woman's Day, and
the like, but not much else.
"Cuisine" and "Cuisine at Home" magazines have online indexes of at least some of their recipes,
but I could not find a listing for "Paella Valencia" in either one, nor could I find any mention
of a "Paella Valencia" recipe from either one on the Internet. Sorry.
For the benefit of readers, the Bon Appetit recipe and links to others that you mention are here:

I will post this for reader input. Possibly one of my readers has this recipe from Cuisine Magazine.
