I work in a hospital where the cafeteria is owned my Morrison's. I love their chili
and have asked several workers for the recipe. Everyone that works there says they
aren't allowed to give me the recipe. The hospital is in Louisville, KY.
Can you help me find the recipe please?
I have a friend, James, who has copies of the Morrison's Cafeteria Kitchen Manual and also of the 1/91
Morrison's Hospital Food Service Manual. He sent the below recipe from the Hospital Food Service Manual.
This is a Food Service recipe and therefore it makes a lot of chili. You'll have to figure out how to cut
it down to home recipe size.
Morrison’s Chili Con Carne
Yield: 3 gallons, 3 quarts
Ground Chuck, or lean beef, 11 lbs., 4 oz.
Onions, chopped, 2 lbs., 2 oz.
In a heavy sauce pot over medium-high heat, cook and stir ground beef until beef
is browned. Add onions and cook until transparent.
All purpose flour, 7 1/2 oz.
Chili Powder, 1 3/4 oz.
Add flour and chili powder, mixing well. Heat 5 to 8 minutes stirring frequently.
Canned diced tomatoes in puree* One #10 can (6 lbs. 9 oz.)
Hot water, 3 1/2 quarts
Canned kidney beans, drained,2 #10 cans (9 lbs)
Sugar, 1 and ½ oz.
Beef base, 10 oz
*NOTE: The diced tomatoes in puree may be replaced with one #10 can of puree.
Stir in tomatoes, water, drained kidney beans, sugar and beef base. Heat to boiling,
stirring frequently. Reduce heat and gently boil 20 minutes.
