In searching through my Kansas City cookbooks, I would swear that I had the
Costello's Greenhouse Zucchini Bread recipe in one of those books.
I can't find it, and I would so like to find it again. I gave away so many of
my cookbooks awhile back but that is one recipe that I would just give anything
to have again.
I noticed that several years ago, someone on your site also requested this recipe,
and I wondered if you were ever able to find it?
Thanks so very much!

Well, I found out that this recipe is in a cookbook called ""The National Food Lover’s Cookbook" (NFL) - “A Superstar collection of recipes from celebrated personalities of the National Football League” compiled by Ruth Arnold-Kenefick, Carolyn Reichow and Dottie Dekko and published in 1980. The recipe was in this book because Vince Costello was a middle linebacker for the Cleveland Browns in the 1950s - 1960s, beside being the owner of Costello’s Greenhouse Restaurant in Kansas City.
Once I knew this, I resolved to obtain the recipe by hook or by crook. Luckily, I was able to get it more by hook than by crook.
Vince Costello’s Greenhouse Zucchini Bread

1 cup oil
2 zucchini, chopped
2-1/2 cups flour
2 teaspoons baking soda

1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup raisins
1/2 cup chopped nuts
Cream eggs, sugar, oil and sifted dry ingredients Stir in zucchini,
add raisins and nuts and stir again.
