Hi, Phaed --
When I was growing up, Houston, Texas had a department store chain called Foley's.
(It is now Macy's.) The downtown store was multi-storied and had marvelous staged
windows at Christmas, and was the ONLY place where the REAL Santa Claus posed
for photos. Foley's had several restaurants -- something casual in the basement,
the Luncheonette on the first floor, and the wonderful and rather fancy Azalea Terrace
on the fifth. There may have been a men's grill as well somewhere. The Azalea Terrace
served something called Turkey and Ham Rochambeau, along with some sweet muffins
or rolls. I recall turkey and ham under a rich cream sauce, and perhaps some English
peas were involved. Can you please find the recipe for me?
Thank you for everything you do!
Vicki

Hi Vicky,

I had more success with this. See below.

Phaed

Foley's Turkey & Ham Rochambeau

6 pastry points (recipe follows)
6 thin slices of ham (about 1 ounce each)
6 thin slices turkey breast
4 1/2 cups American Cheese Sauce (recipe follows)
1 1/2 cups new potatoes
1 1/2 cups cooked early green peas

Place a pastry point in bottom of each of 6 individual casserole dishes.
Top with a piece of ham and turkey.

Pour 3/4 cup cheese sauce on top. Place under broiler until cheese is
lightly brown.

Place potatoes at corner of dish and peas opposite.

Pastry Points

3/4 cup shortening
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1/3 cup ice water

Preheat oven to 350 degrees. In a bowl, thoroughly mix shortening, flour, salt
 and sugar. Add ice water.

Knead lightly or mixture will flake. Roll out to -inch thick, about a 24-inch square.
Dust with flour and cut into 4-inch squares. Using a fork, prick holes at each
corner and in center. Bake until golden brown.

American Cheese Sauce

6 tablespoons butter or margarine
1 tablespoon flour
3 cups milk
12 ounces grated American cheese

In a saucepan over medium heat, melt butter and add flour, stirring constantly.
Add milk, continue stirring and bring to a boil.

Add cheese and stir until smooth.
