Onion Sauce for Hot Dogs:

Ingredients

2 large sliced onions. More if you lean towards wanting more onions than sauce.
1 1/2 teaspoon New Mexico chili powder
1/2 teaspoon of smoked paprika
1/2 teaspoon of ground cinnamon
1/2 cup of ketchup
1 teaspoon of hot sauce or to taste - I used Tapatio
1/2 teaspoon prepared mustard
1 teaspoon of brown sugar
Water
Salt and pepper to taste
Bacon bits optional

Steps

Saute onions until translucent. I like to let some get browned
Turn down heat and toss the onions with the seasonings
Stir in the ketchup, hot sauce, mustard, brown sugar, and raise the heat 
continuing to stir
Add 1/4 cup water at a time to the onions to create the consistency of the 
sauce and texture of the onions you enjoy as you continue cooking

Historic recipes are my favorites. The Star Theater, at 313 Mobile Street in Hattiesburg, MS, catered to an African American audience. It opened in 1943 with seating listed at 300 and closed in the late-1950’s. It has since been demolished.

I am speculating, but I think that this sauce must have been served on hot dogs sold at the Star's concession stand.
