Thank you very much for my previous request a few months back. Hoping you can help me again.
I am looking for a retro recipe that Mimi’s Restaurant used to serve but no longer and has
been years since they did. At least in Texas. It’s called Tostado Salad. Oh so good, simply
can’t find it. I noticed there are a few others looking for same recipe. If you can help I
will appreciate it so very much. Thank you. Ina

Hello Ina,

I am not having any success with this. I need more information.

First, is it "Mimi's Restaurant" or "Mimi's Cafe"? Where was it located? Cleburne or Keene, Fort Worth or another town?

The Internet tells me that the proper spelling is "tostadA", not "tostadO", and that it is a toasted or fried corn tortilla. When it's used in a dish such as a salad, the tostada is on the bottom, is sometimes flat or sometimes slightly bowl shaped, and the remaining ingredients of the salad are on placed on top of it.

I see menus with either chicken or beef as ingredients of "tostada salad". Was your tostada salad made with chicken or steak or ground beef or something else? Pork? Vegetarian?

Please give me a description that is as detailed as possible regarding the ingredients. Remember that even if the recipe  or a similar one is on the Internet, it may not mention Mimi's at all. There may be other, similar, recipes on the web that I can send you, but I need more description to find the right ones.

It is tostada salad, With the fried tortilla on bottom. It has corn, lettuce, beans, ground beef,
cilantro, cheese  and dressing, layered with crisp corn tortilla. It was served in Ft Worth Texas.
More than 20 years ago at Mimi’s Café. Only one in Ft Worth. I am not only one looking for this
recipe. It also had strips of fried tortillas through out the salad. You could get any dressing
you desired. The corn tortilla was not shaped like a bowl but flat on the plate and crispy.
Hope this helps. Thank you Ina.

Hi Jennifer,

Sorry, I am finding nothing but dead-ends in this search. There's been a request for this recipe on "recipelink" since 2006 and the requester rejected the only response that was given.

"Mimi's Cafe" is a chain, and some of their fairly recent menus have this on their menu:

"Zesty Chicken Toastada Salad"
"corn, red and green peppers, diced tomatoes, black beans and lettuce tossed in ranch, atop layers of crispy corn tortillas. Topped with fresh avocado, cilantro and honey lime sour cream"

It's not so much a recipe as it is a menu description, but it is all that I can find.

I'll post this for reader input.

Thank you kind sir. That sounds a lot like it except a couple different items.
I think I can tweak it and have a close recipe. Thank you for your time. I have
couple more recipes I would like to find. When I have time I will ask you about them.

Thanks again. Ina
